PAKISTANI YAKHNI PILAU FULL RECIPE
INGREDIANTS REQUIRED...
Meat (with bones) 750g Rice basmati( washed and soaked for 30 min) 750g onions 4 medium
ginger garlic paste 1 tablespoon oil 1 1/2 cup salt to taste coriander powder 1 tablespoon
ginger powder 1 teaspoon green cardamom 3 brown cardamom 2 cumin seeds 1 tablespoon
bay leaf 1 cloves 4 red chili powder 1 tablespoon cinnamon 1 black pepper powder 1 tea sp
STEPS OF COOKING.........
1. In 7 cups of water add meat, ginger garlic paste and add all spices including green and brown cardamom, bay leafs , cloves, red and black pepper, ginger powder, salt and coriander powder. Cover the meat and make a stock until the meat is soft and tender.
2. Then remove the meat from the stock. Measure the stock and make it exactly equal to 6 full tea cups. If the stock is less add water. Sieve the stock, remove and discard the whole spices.
3. In hot oil fry onions until very light golden. Then add meat and stock. Bring to boil.
4. Drain the soaked rice thoroughly and stir it into the boiling meat and stock.
5. Cover tightly and cook undisturbed on low heat for exactly 20 minutes.
6. Remove from heat and mix the pilau.
SERVE IT WITH CHILLED YOUGURT AND SOME COLD DRINK
